Bryn Williams Academy
The service industry is booming, and there are countless job opportunities for you when you have the right qualifications. Coleg Cambria can give those to you, with our industry-experienced tutors focusing on customer service, health and safety protocols and developing your professional practical skills. You’ll learn to prepare and create a wide range of food, from classic local dishes to internationally-inspired cuisine, cakes, pastries and more.
All of this will be done in our state-of-the-art kitchens and site restaurant, iâl Restaurant, where you can really test your talents and serve real, paying guests. We have links with local companies that will help you on the ladder to your dream career. All you need is a passion for great food and stellar service; we’ll show you the rest.

Bryn Williams Academy
Learn from the best!
Coleg Cambria and top chef Bryn Williams have launched the Bryn Williams Academy to positively influence the future generation of chefs and hospitality staff from across North East Wales. This is the first academy for Bryn, for Coleg Cambria and for Wales.
You will benefit from masterclasses led by Bryn Williams and his team of specialist chefs, which will be held at Iâl Restaurant at Coleg Cambria Yale as well as Bryn’s restaurant, Bryn Williams at Porth Eirias. This will allow you to put your knowledge and skills into practice and further develop them in a workplace setting.
Upon successful completion of the programme there will be opportunities to progress onto a higher level course or into employment. The academy team will remain in contact throughout your career and offer advice and guidance.
If you have a passion for catering or front of house and have the drive and ambition to be at the very top.
Places are limited, all academy applicants will go through the selection process.
The academy consists of a programme which will provide you with pathways into employment with a combination of education and high end work experience. The academy programme includes:
- A full time study programme which includes Level 3 Diploma in Professional Cookery or Level 3 Food and Beverage Service Supervision as well as a programme to further develop English and Maths skills.
- Masterclasses led by Bryn Williams and his team of specialist chefs.
- High end work experience
- An academy uniform
You will study at the Iâl Restaurant at Coleg Cambria Yale.
Work placements will be carried out at Bryn’s restaurant, Bryn Williams at Porth Eirias.
About Bryn
Hailing from Denbigh in North Wales, Bryn Williams learnt to appreciate food and its origins from an early age.
He has worked in some of the most prestigious kitchens in London. He has worked under Marco Pierre White at The Criterion, Michel Roux at Le Gavroche for three years and he was senior-sous at The Orrery for four years.
Bryn is now the Chef Patron of Odette’s, taking over the property in October 2008. Bryn also is at Porth Eirias, a beach-front Restaurant, Café & Bar on the North Wales Coast. Bryn has also opened at Somerset House, on The Strand, London.
